Spring Fever

Spring brings out the best in all of us, and by working with others I’m often amazed by ones desire to achieve results if the right mentality develops. After the snow melts and temperatures begin to rise you automatically begin to think about your body in a whole new light. Bathing suit weather will be here soon and when you live on one of Canada’s most beautiful Islands, Prince Edward Island never more than 20 minutes away from the beach.

Now’s a great time to get started on the road to better health. Challenge yourself, get organized and most importantly focus on you. It’s those little things you do that combine together to create a healthier lifestyle. Activities like waking up a half an hour earlier to go for a walk, or eating a salad everyday. Simple small changes can equal success as a habit becomes your lifestyle. Perhaps you’ve caught the spring fever, are terribly upset and ready for change up-ahead.

Healthy Recipe to Share – Chickpea Pattys            serves 4 

½ cup bulgur wheat
½ cup boiling water
2 large eggs
19 oz canned chickpeas
1/3 cup dry ww bread crumbs
4 TBSP fresh parsley, chopped
3 TBSP fresh parmesan cheese
1 tsp Worcestershire sauce
½ tsp dry mustard powder
½ tsp oregano
¼ tsp garlic powder

Stir bugler with boiling water, let stand for 15 minutes. Process eggs and chickpeas in food processor until smooth. Pour into bugler and stir well. Add remaining ingredients and shape into 6 patties. Cook in a skillet sprayed with non stick cooking spray. Dress up your burger with extra veggies and enjoy with a garden salad on the side.
